I bought some live sauerkraut the other day because it's recommended that I add fermented food into my diet. And by 'live' I mean that there are live active probiotics in the sauerkraut. Fermentation simply refers to an ancient technique and perseveration method that naturally alters the chemistry of foods. It is the metabolic process of converting carbohydrates, like sugars, into either alcohols and carbon dioxide, or organic acids. Sauerkraut’s fermentation process produces beneficial probiotics that are linked to improvements in immune, cognitive, digestive and endocrine function.

I love pickled foods. I grew up on many pickled fruits and and vegetables as a part of Asian culture. So, I didn't think sauerkraut would be a big deal to me. Sauerkraut is.. well, it's different. I can't say I enjoyed it. But I also didn't immediately hate it. I'm sure it will grow on me. It has to.

Bratwursts and hotdogs came to mind when I thought of sauerkraut. So, I picked up package of Earl Campbell's Hot Links to compliment the sauerkraut. I am supposed to avoid spicy foods and peppers, but the label indicated that this particular 'original' package was not spicy like it's counterpart packages. Maybe I'm naive for thinking Earl Campbell's has recipe with no spice, because these definitely had a hint of spice. I also had half of a pickle with my dinner. It's pickled. So, that's appropriate right? I couldn't find a straight forward answer online so I just went for it. Pickles are one of my favorite snacks.

Well, I don't know if it was the hot link alone or both the hot link and the pickle, but I immediately had stomach bloating and gas. Although I was still hungry, I was afraid to do more damage to my gut and finished up my dinner with watermelon and sunflower kernels.
