Day Four to Healing

(recipe below)

I nearly sabotaged my progress today. My husband and I didn't get off to a great start and the remainder of my day was on-the-go with back to back appointments and errands. I forgot to grab my pre-made smoothie on my way out the door and I'd be hours before I got back home for lunch. I passed by several fast food chains and looked really enticing on an empty stomach. Also, when I'm upset, everything might as well take a backseat to my emotions. And when I'm emotional, I want comfort foods, and lots of it.

I went into HomeGoods for some puppy supplies and at the check out counter saw their array of non-potato chip options. Although I was scouring for a bag of kale chips, I came across a bag of plantain chips with only three ingredients; plantains, coconut oil, salt. I was sold. That's exactly how I make plantain chips at home. Once I hopped in the car, I immediately opened the bag and ate enough to calm the hunger. I made it home to prepare lunch at home, and then was out the door once again. This time I wouldn't return home until after 7. I ran into the same scenario and while I was out in Hurst, I pulled into Natural Grocers to pick up some kombucha and raw sauerkraut and grabbed me another bag of plantain chips to snack on, on my way home.

Although there were several times that I had to talk myself out of grabbing something do convenient and completely inflammatory, I made it through another day without any setbacks.

8:30p Mash up of Beef, Cauliflower Rice, Cucumbers
